A day on the South Beach Diet.

day 2 of SBD went well. better than day 1 when i cheated with a plate of fruit salad and a few chocolate balls – i was at a girls night watching “the bachelorette” and i totally caved. first day bombed, but at least i killed it with FRUIT of all things. oh and Ed, seriously, did she really pick him for top 2? noooooo.

breakfast: 1/2 cup egg substitute (equivalent to 2 eggs) scrambled w/ cherry tomatoes and partly skim mozza cheese, 2 slices of turkey bacon (overcooked, woops!).

morning snack: fat free vanilla yogurt (i have such a hard time with yogurt, i normally can’t stand it, but i just happen to be a huge fan of dairyland SHAPE fat free vanilla yogurt! it’s a miracle!).

lunch: spinach salad with fat free turkey breast, light feta cheese, cherry tomatoes and the best dressing, oil and red wine vinegar. v8 juice. sugar free butterscotch pudding.

afternoon snack: celery sticks with light laughing cow cheese

dinner: chicken breasts stuffed with spinach and light ricotta cheese (regretted using ricotta, wished for a stronger cheese like goat cheese which is what the recipe actually called for). should’ve probably had a salad or a steamed veggie on the side, but i couldn’t be bothered tonight.

evening snack: fat free fudgsicle

i swear, i eat more now than ever before!

and just for fun, 3 new, never been tested in my kitchen grocery items were purchased this week, brought to you by, of course, the south beach diet:

1. firm tofu (light)
2. eggplant
3. spaghetti squash – i didn’t realize i was supposed to save this meal until phase 2, so i’m gonna have to try to figure out how to eat it within phase 1 rules, woops! i also didn’t realize that the squash is literally called “spaghetti squash” – i thought that was the name of the meal! funny.
