delishplan week 27

i think i have decided on a name for my weekly meal planning posts: “delishplan”. simple and obvious without having to spell it out (i.e. “what we are eating for dinner this week”  – not cool). thanks to camille for the idea to include “delish” in there – i am a fan. so, if you are ever looking for my weekly meal plans, you can now look over to the right hand column, scroll waaaaaaay down and find the “label cloud”, and click on “delishplan” (rather than meal plan) to get them all in chronological order. it will take me a few days to get them all switched over, but it shouldn’t be long. got that? super.

here it is, what i know you’ve been waiting for: the delishplan.

monday: we ordered pizza on saturday night, and we ordered a LOT (why is it so hard to pass up a good deal?). mine is mediterranean veggie and kev’s is steak mushroom melt (eww). so that’s that!

tuesday: remember that bbq shrimp pasta salad from last week? yup, never got made, but still have all the ingredients. tuesday night it is!

wednesday: grilled chicken with rosemary – a recipe i found in “french women don’t get fat” – when i’m done reading it, i’ll tell you about it. served with brown rice and a beautiful summer salad that a friend sent me that i just can’t wait to try. it  is filled with blackberries, feta, candied pecans and an orange sesame dressing – thanks emilie! recipe at the bottom of this post for your viewing pleasure. 

thursday: haven’t made this in awhile, and it’s seriously a hit in this house: southwestern turkey chili. i’m excited to make this again bc i know we both luuurvvve it. that’s a lot of love if we lurve it. this meal will make up for any dinners kev doesn’t like this week. bonus.

friday: we are going CAMPING. you heard me. camping is gross. i’m concerned. what on EARTH are we going to eat? berries? bark? i seriously have no clue. where are we going to sleep? apparently a tent. i’m telling you right now, if there is any trace of lightening or bears, i will be sleeping either in the car or with the 9 other friends who are bringing their luxery trailers with them. spoiled. what are we going to DO? well. this one i have figured out actually. lawn chairs. drinks. the dice game. campfire. and the 7 other couples who are coming along. this is sort of starting to sound fun. until i remember the being gross part and the tenting part. heaven help me.

ok here’s where i need you: camping food – what and how. otherwise – it’s berries and tree bark for us. maybe kevin will be able to spear us a fish. yes please help. i need breakfast & lunch. dinner is smokies and a salad to share with everyone- i can do that one. but snacks? breaky? lunch? i’m lost. which reminds me, i’d better bring a compass just in case.

here’s that yummy salad to make while you think about it (notes are emilie’s):

Mixed lettuce (I like red leaf and romaine mixed together)
Blackberries (costco’s are amazing)
Crumbled feta
Green onion
Sugared pecans (I buy a large bag and make a batch…put the pecans in a non-stick pan on high, toast about a minute, sprinkle with a generous amount of brown sugar and a wee bit of water. This will be syropy and then simmer and stir until the brown sugar syrop turns to crunchy coating on the pecans. Cool and store in zip-lock bag).

Dressing can be Kraft Orange Sesame OR:
1/4 c Orange juice  
1/4 c Cider vinegar    
2 tb Sugar   
2 tb soy sauce    
1 tb Toasted sesame oil

    Okay….we just came back from camping and a big rain storm (in SE BC at Kikomun Creek) tore our tarp at 1 am Thursday morning. Yes the rain misted through our fly and tent because it was pelting so hard.

    But we really had an amazing time. Breakfasts are the best camping. Pancakes (use a mix) with thinly sliced peaches laid in the batter while the first side is on the griddle. Flip, cook and serve with syrop. Yum… Eat late so you don’t have to eat lunch. Snacks are trial mix and good ol’ junk food 🙂

    A great easy snack is rice crispie squares. But I make them in the microwave. Marshmallows and margarine, heat/stir until ready to add the 10 cups rice crispies. Then I use the Rice Crispie box (the small one) to press the mix into. I lay the box flat and cut three sides like a lid. Then cut the liner open so that I can place it back on top of the squares to seal in the moisture. Press in the rice crispie mix. Seal the liner back up and place other treats on top (like trail mix or licorice). Close the box ‘cover/flap’ and there’s your disposable snack box full of the good stuff. Cut the squares before you go. Ohhhh….my favorite is to add chipits to the mix when I’m stirring the rice crispies in. Definitely makes these a wonderful treat. (I’ve added craisins and peanuts as well as chipits, too.)

    That salad sounds awesome — what a great combo, with bluberries and feta. I can’t wait to try the dressing too!

    yeah, that salad sounds gooooooooooood.

    ok i like camping when someone else cooks. i never know what to bring camping. but junk food always works.
