delishplan week 63

I haven’t had a meal plan in a couple of weeks, and today I’m all excited to plan one! Continuing with my “quick and easy” theme of late, I have a good solid week of meals planned, and it sure does feel good. One of these meals I am actually making this afternoon because two of my girlfriends had babies a couple of weeks ago, and I am bringing dinner to both of them tomorrow evening… so I figured if I’m going to cook one, I may as well cook THREE, one for each of us! It’s Kevin’s favorite, so we’re starting the week off with a bang.

Here’s what we got:

Sunday: In the oven right now is a frozen casserole, Cheesy Beef Hash. Comfort food at it’s finest. Bring it on.

Monday: Layered Chicken Almondine Bake, salad and french bread (we seriously NEVER eat this good on a Monday!!!). Click on title for the recipe.

Tuesday: Leftovers

Wednesday: I need salsa and sour cream in a bad way lately, so I’m thinking Taco Salad or nachos (for Kevy).

Thursday: Creamy Garlic & Herb Shrimp Linguine

Friday: It’s Good Friday, and we have the day off, so I think we’ll play it by ear! There’s always Kevin’s world famous omelettes if all else fails.

Sometimes these meal plans come to me so easily, and this is one of those weeks. I did this in about 8.5 minutes. Let’s hope it inspires you to plan your week as well, and if you do, please share it (so that I can steal it next week perhaps!).

    Try stromboli one night…we make ours with either ranch, chicken, bacon, and tomatoes….OR alfredo sauce, chicken and ham….OR pizza sauce, sundried tomatoes, olives, chicken and loads and loads of cheese in them all! This way the kids can make what they love and Shawn and I each make what we love! I love watching what you make….I do believe I want the recipes for both Sunday and Monday’s meals, they sound yummy!!!!

      stromboli sounds great, and kevin would for surely love it! what do you use for the crust? regular pizza dough??? good filling ideas too, thanks!!!

        I just make regular old pizza dough and do with it as I see fit…ha ha! Or the Pilsbury isn’t bad, the taste though kinda gets to me after awhile…I have a bread maker so that makes making the dough a bit easier, just throw it all in and walk away and 90 min later it is ready to go!

    mine husband is out of town until may, so the meal plans go down the drain. dinners consist of japanese takeout or ice cream @_@! but i really like that nachos idea, that sounds so soo good!

    I made chicken chili on Sunday for a big crowd but the dinner plans got cancelled so I have a huge pot of chicken chili in the fridge. I guess we will be eating that for two days or so. Then I am thinking shrimp pasta. Also, we saw on Fine Cooking magazine a new way of cooking whole fish by sealing the fish with salt- and-egg white crust and baking. My husband wants to try that. If that fails, there is always nachos and taco salad as you suggested 🙂
